That's what's in the Koffeesome catalogue today, and we're just getting started. This newsletter exists to make sense of it: one coffee, one roaster, one insight at a time.

Uribe, Cauca sits at the heart of Colombia's most storied growing region: high altitude, volcanic soil, and diurnal temperature swings that push a coffee's sweetness to its limit. El Tambo opens with dark, syrupy depth and lifts toward bright citrus on the finish. It's the rare cup that works as both a contemplative pour-over and a punchy espresso.

Olisipo are Lisbon-based and obsessively sourced. They've dialled the roast to let the cacao backbone hold without tipping into bitterness. Worth your attention this month.

The Folks

The Folks have built something quietly essential in Lisbon's specialty scene. Their Santos café is a reliable compass for anyone serious about coffee in the city: rigorous and relaxed in equal measure, the kind of place where the barista talks you through a natural Ethiopian with genuine enthusiasm, not performance.

Their current offering includes Cosmic Chiriso – Colombia (maple syrup, tropical fruit, blackberry) and Chelchele Funk – Ethiopia; structured, bright, and true to its name. The Folks don't roast loudly. They let the coffee do the talking.

Your V60 draining too fast? It's probably not your grind.
The default diagnosis is always "grind finer," and sometimes that's right. But if your V60 drains consistently in under two minutes, check your pour rate first. A fast, high-volume pour agitates the bed and opens channels that bypass the grounds entirely. Try slowing to a thin, controlled spiral and keep your total pour time above 30 seconds. Extraction often improves without touching the grinder at all.
