Founded in 2022 in Chiado, The Folks is a Lisbon specialty coffee brand driven by knowledge, technology, and hospitality. From a single café to 6 locations across the city, they launched their own roastery in 2024 and now serve ~500,000 customers a year — ranked among the world's top 100 coffee shops two years running.

Founded in 2018 by three friends — two Marcos and a Marc — who roast and serve seasonal coffee with a smile. Marco De Rebotti and Marc Auguyé previously worked at Nømad Coffee before teaming up with Marco Paccagnella to build their own roastery and café in Barcelona. They acquired their own roasting machine in 2020 and now run multiple locations across the city.

Founded in 2007 in Oslo's Grünerløkka neighbourhood, Tim Wendelboe is one of the world's most respected specialty roasteries. Tim won the World Barista Championship in 2004 and the World Cup Tasters Championship in 2005. The roastery operates its own farm in Colombia (Finca El Suelo), publishes full pricing transparency with producers, and roasts fresh every week in small batches.
