Alchymista is a small Czech roastery started in 1998 by the artist Kateřina Ebelová alongside her Cukrárna Alchymista café at Prague’s Letná. Roasting happens in a north-Bohemian village on a PROBAT machine — about 300 kg a month in 5 kg batches, worked by eye, ear and smell rather than software, with every bag hand-weighed, labelled and sealed. The Letná site pairs the café with a Coffee Museum and the Scarabeus gallery and garden. Its own shop (alchymista.cz) is offline; beans are sold through the kofio.co marketplace.
