A specialty coffee roaster, bakery and café founded in Aarhus, Denmark in 2012, roasting since 2013. La Cabra takes a straightforward approach to coffee, prioritizing green coffee quality above all — rather than separate filter and espresso profiles, each coffee is roasted with a single profile chosen to best showcase its character. The company sources through direct relationships with producers and selective importing partners, with regular origin visits, and has grown from its original Aarhus café into cafés, bakeries and a roastery across Copenhagen, New York, Bangkok and Muscat (Oman). Grown by Leonardo Loaiza on a steep mountainside in Buesaco, Nariño: bright citrus with a crisp balance of red-berry acidity and deep dried-fruit sweetness. August 2025 harvest.

A returning favourite from the Rungeto FCS's Kiangoi station, whose Kii and Karimikui stations La Cabra has also bought from. A typical washed Kenyan profile of fresh, crisp redcurrant and floral hibiscus. December 2025 harvest.

Individual lots bought from several returning partners in the Huista micro-region of Huehuetenango, an area of very small farms. Crisp and sweet: ripe red berries, sweet dark chocolate and raisins. April 2026 harvest.

A delicately floral Gesha 1931 from the Oma plot of Gesha Village in Bench Maji. The careful natural process adds complexity and sweet stone-fruit notes to the variety's floral, fresh character. January 2026 harvest; a Rare release in 100g tins.

A natural community lot from "garden farmers" around Shantawene in Bensa, each working plots of about 1.5 hectares under native Wanza, Shola and Tsid shade trees. Blackberry, cherry, blueberry and citrus carried by brown-sugar sweetness. October-December 2025 harvest.
