A hyper-focused specialty coffee roaster founded on the belief that coffee should be environmentally-responsible, economically sustainable, progressive and delicious. Run by green-coffee buyer and industry consultant Christopher Feran (six years as director of coffee at Phoenix Coffee Co.), Aviary launched in summer 2023 via Kickstarter and sources exclusively from philosophically-aligned producers, paying well above the long-term cost of production.
