Lark Coffee Roasters
Creston, BC, Canada
Lark Coffee Roasters is a small-batch roaster in Creston in BC’s Kootenays, started by Ilana Cameron in 2015 and named for the birds of the Creston Valley wetlands. It roasts on a Diedrich, favouring approachable medium profiles that balance origin character and sweetness — blends such as Viewfinder, Blackbird and Handsome Tiger plus rotating single origins and decafs. The roasting studio on 11th Avenue North is open to walk-ins a few hours on weekdays.

Our Darkwoods blend is named after the Mountain Caribou habitat that the Nature Conservancy purchased north of Creston, on the west side of Duck + Kootenay Lake. This area is a rare inland rainforest habitat and one that we treasure having in our backyard. Source: larkcoffee.ca (roaster’s own copy).
