Sensorio Coffee Lab

Rome, Italy

Specialty coffee lab and brunch cafe on Via Flaminia near Piazza del Popolo, founded by brothers Matteo and Luca after years working in specialty coffee abroad. Roasts single-origin coffees in-house ("single origins roasted directly by us") sourced through direct relationships with producers across Ethiopia, Colombia, Costa Rica, Peru, Rwanda and Uganda, sold both at the bar and online. The room pairs a barrel-vaulted, exposed-brick space with a gourmet breakfast and brunch menu — omelettes, artisanal sandwiches, pastries — alongside espresso, batch brew and hand-brewed filter.
