Solde visited Leonardo Mora at the family micromill in February 2025; he has led it since 2020 and professionalised its processing. Cherries picked at 24° Brix, pulped the same day, dried 18-22 days on raised beds (turned every 30 minutes) and rested a month in GrainPro. For pour-over.
