Sincerely (legally Sincerely UG) is a Berlin specialty coffee roastery founded by John Darcy, an astrophysicist turned coffee roaster, built around direct, long-term relationships with growers — "sustainable coffee built on relationships," ensuring everyone along the chain, from farmer to drinker, is looked after. The catalog leans on partnerships with sourcing groups like Raw Material and Muraho Trading Co., spanning single-origin lots from Brazil, Colombia, Mexico and Rwanda plus a sugar-cane-process decaf and a 50/50 half-caf blend. Darcy also co-founded Open House, a café, bakery and community space at Christburger Straße 13 in Prenzlauer Berg that opened in November 2023 and serves Sincerely's coffee exclusively — daily rotating filter and a Brazil-roast espresso — alongside house-baked sourdough and a full daily brunch.
