Coutume Café
Paris, France
Founded in 2011 by Tom Clark (with co-founder Antoine Nétien) on the conviction that "coffee deserves the same rigor as wine or gastronomy." Coutume was one of the pioneers of specialty coffee in France, sourcing single-origin lots from 30+ origins and roasting roughly 65 tonnes a year on a 750m² facility in Romainville, outside Paris, for 350+ professional clients ranging from independent coffee shops to Michelin-starred restaurants.
