Thom Bargen is a Winnipeg roaster and café group that opened its first shop on Sherbrook Street in 2012. It buys several coffees directly — including from the Dumerso sisters’ washing station in Ethiopia and Ricardo Perez’s Helsar station in Costa Rica — and runs cafés on Sherbrook, Kennedy Street and two on Corydon Avenue, plus latte-art classes. Its house coffee is the Always Sunny blend.

This coffee honors the people of Huila, known as Opitas, a name rooted in history. During the independence era, “Opa” was a secret code used by locals in the province of Neiva to signal unity and the fight for freedom. Over time, Opita became a warm term for their descendants, symbolizing the region’s enduring spirit of pride, kindness, and community. Huila stands out as the country's top producer of specialty coffee by volume. Known for its award-winning quality, Huila has earned a Denomination of Origin thanks to its consistent excellence. Most farms in the region are small, family-run opera Source: thombargen.com (roaster’s own copy).

Decaf – Always Sleepy

Our Always Sleepy Sugarcane decaf takes decaf coffee to the next level using high quality coffees sourced through Sucafina Colombia’s integrated supply chains.  Sugarcane decaffeination utilizes a naturally occurring compound, ethyl acetate (EA) to decaffeinate coffee. The EA process is relatively simple. The coffee beans are moistened with water and EA is circulated throughout. The EA binds with the caffeine in the bean and extracts the caffeine while leaving most of the other flavor compounds. Source: thombargen.com (roaster’s own copy).

Dumerso Sisters - Ethiopia

When we first tasted the Dumerso Sisters coffee in Addis, we were blown away! The coffee was delicate, clean, and floral. This is exactly what we look for in Guji and Yirgacheffe coffees. We then travelled up country to visit them in Hirut. We walked their washing station and learned about their social initiatives. Their passion for coffee and community is impressive. For more info on this, check out our farm stories. Source: thombargen.com (roaster’s own copy).

Fidencio Castillo’s El Pedregal has grown from 1,500 to over 20,000 coffee trees, supported by his family and community. Located in the high-altitude Nariño region, the farm benefits from cool temperatures, the Juanambú stream, and a diverse ecosystem. This washed Caturra undergoes extended fermentation, producing a cup with bright citrus acidity and creamy body. Source: thombargen.com (roaster’s own copy).

We had the privilege of visiting Alejo at his farm a few years ago.  Although he is a 5th generation coffee farmer, he has modernized the farm with a focus on quality.  This yellow honey is a fantastic example of his hard work. Source: thombargen.com (roaster’s own copy).
