Founded in 2016 in Neukölln, Berlin — though the idea took root years earlier in Helsinki — Populus Coffee is a family-run specialty roastery started by Sari and Henrik Haavisto. A 2014 reporting trip to Guatemala and Honduras exposed Henrik to the direct relationships behind specialty coffee, and the name Populus — Latin for "people" — reflects that people-first philosophy: "We want to work with good people, who make great coffees." The roastery works directly with long-term producer partners across Peru, Brazil, Honduras, Ethiopia, Uganda and beyond, roasting out of a shared space in Neukölln alongside other coffee professionals.
