Banko Gotiti is one of those names that carries some serious weight in Ethiopian coffee. Located high in the Gedeo Zone at the southern edge of Yirgacheffe, the washing station works with smallholder farmers growing Ethiopian landrace varieties across the surrounding hillsides. For this natural-process lot, ripe coffee cherries are carefully sorted before being dried whole on raised beds. We don’t dabble in dark roasts too often so when we decided to give it a go, we wanted to craft something that tasted like our grandpappy's cup of joe, a nostalgic cup that reminds us of our favorite diner, while at the same time meeting the standards of our specialty coffee values. Produced by the Osorio family in the highlands of Planadas, Tolima, Colombia, our Palo Rosa Sugarcane Decaf is decaffeinated using the natural sugarcane (EA) process. Rather than relying on harsh chemicals, this method uses ethyl acetate derived from fermented sugarcane to gently remove caffeine while preserving the coffee's natural sweetness, body, and complexity. The beans are carefully steamed, decaffeinated, and dried before being returned to their ideal moisture content, resulting in a cup that's remarkably vibrant, clean, and flavorful. For more than six years, the Campos family has produced some of our favorite coffees from Costa Rica. This past harvest, we secured a rare natural-process lot of Milenio H10, a modern variety prized for its remarkable sweetness, complexity, and fruit-forward character. Grown in the fertile mountain soils beneath Chirripó and meticulously processed by the Campos family, this coffee showcases why their farms continue to produce some of Costa Rica's most sought-after coffees. Sonia Bolaños has been working in coffee since she was 14, when she’d head from school to neighboring farms to pick cherries and help support her family. Today, she manages four hectares in San Agustín, Huila, growing coffee alongside her husband, Deimar Muñoz. Together, they’ve steadily built their family farm into something pretty special. This washed Pink Bourbon marks Sonia’s first export of the variety to North America, and we’re stoked to have been introduced to it through the amazing folks at Semilla, a specialty coffee import and advocacy company based in Montreal, Canada.
