After being asked to serve drinks at SCA Expo 2022 in Boston, we created this blend to share with industry folks in hopes of turning heads. The goal of this blend is to cut through 4-8 ounces of milk and preserve a heavy coffee presence without roasting the coffee to a darker, more carbonic profile. We achieved this by creating a blend of one coffee that is super spicy and acidic, and another that has more available sugars and developed notes. This balance presents us with loads of soluble materials that create an espresso that is citrus and spice forward with chocolate and vanilla finish. We Source: crimsoncoffee.com (roaster’s own copy).

Before he became one of Guji’s most precise producers, Getachew Zekele was an accountant — a literal bean counter. After selling a property in Addis Ababa in 2008, he used the proceeds to buy land in Shakisso and began planting coffee. By 2009 he was harvesting his own crop, collecting cherry from neighbors, and selling through the ECX. In 2016 he formalized Dimtu PLC, pairing his own farm (Tero Farm) with a washing station and later a dry mill to oversee quality from cherry to export. What distinguishes Dimtu from most private washing stations is the structure of its outgrower program. Rather Source: crimsoncoffee.com (roaster’s own copy).

Kossa Kebena is located in Western Ethiopia’s Limmu Kossa District, in the highlands of the Kebena Forest. This 1,000 hectare farm was established in 2009 as a land grant from Ethiopia’s investment agency to safeguard some of the last remaining dense forest in the country. Abdul continues to push the boundaries of coffee production in this region, experimenting with processing and cultivation, all for the sake of producing some of the best coffee Ethiopia has to offer. The Good Food Awards is one of the top honors in the food industry, Kossa Kebena came out on top in a blind tasting among 1,83 Source: crimsoncoffee.com (roaster’s own copy).

Loud Mouth was born from competition and made for people who want their coffee to stand out. It’s bold, fun, and a little unexpected. This blend brings together two very different coffees: a smooth, washed coffee with hints of semi-sweet chocolate and citrus, and a wild, flavor-packed co-fermented coffee that steals the show. Co-fermented? It’s a process where fruits, spices, or plants are added to the coffee during fermentation, after the cherry skin is removed, giving it unique flavors you won’t forget. Done right, it creates a coffee that’s aromatic and clear in flavor. Source: crimsoncoffee.com (roaster’s own copy).

Why a goat you may ask? According to folk-lore, a goat herder took his goats out to pasture one day. At the end of the day, he would use a flute to call them back to the farm. He tried the flute several times with little success and decided to find his goats. When he found them, they were eating cherries from a tree (the coffee cherry) and acting frisky. He made the leap and decided to try the coffee cherries for himself. The insignificant act of eating a cherry created a global phenomenon in which we call coffee. Comprised of coffees from Central America, South America, and Indonesia, this bl Source: crimsoncoffee.com (roaster’s own copy).

Why Wayfarer? It literally means traveler. We wanted to offer a blend that uses a rotating variety of current crop coffees. This coffee is blended to focus on all brewing methods including espresso, batch, and single cup. This blend should always have some fruit and caramel notes with a medium acidity and medium body. As an espresso, Wayfarer Blend should look like maple syrup coming out of the machine and should have notes of tree nuts and chocolate. Source: crimsoncoffee.com (roaster’s own copy).
