About this coffee

This washed lot originates from Chelbessa, in the Gedeb woreda of Ethiopia's Gedeo Zone. This coffee is produced by a network of smallholder farmers cultivating indigenous Ethiopian heirloom varieties at high elevations, where cool temperatures and extended cherry maturation contribute to increased sugar development and enhanced cup complexity. Only fully ripe cherries are selectively hand-harvested before being delivered to the washing station. Upon reception, cherries undergo flotation to remove low-density fruit and foreign material prior to depulping. The parchment is then fermented under Source: rkicoffeelab.com (roaster’s own copy).
