There is a particular kind of impatience in the first sip of coffee. The cup is too hot to drink properly, so the sip is quick, defensive, more about getting caffeine into the bloodstream than about tasting anything. Twenty minutes later, the same cup, forgotten on a desk, gets a second sip out of habit. And something has changed. The coffee tastes sweeter. Rounder. Sometimes there is fruit in it that was not there before, or seemed not to be.
