When I asked Thanasis Angelopoulos how he prepared for the World Coffee Roasting Championship, he started with something he lacked: the machine.

After each practice trip, he told me, he began arranging the next. He would spend two days at a roastery abroad learning a roaster he couldn't practice on in Greece, and by the end of the second day he was already planning the following visit. "Every trip something is missing," he said.
