Alter Ego is our dark roast. Now, don't expect to see black sweaty beans here. This is a well developed roast that still leaves the beans chocolate brown but brings out warm flavours of dark caramels, baker's chocolates and spices. It's syrupy and round. Candy Cloud is an espresso that will push your boundaries. The coffees we put in it are fun, a bit out there, but above all sweet and super interesting. Source: philsebastian.com (roaster’s own copy).

Some farms have a great year. Carmen Estate has had a great decade, and their Geisha is a big part of why. They have won the Best of Panama with their Geisha washed and took two places in the top five in the Geisha natural category in a single year. Carmen Geisha is amongst my top coffees in Panama every year and this one is no exception. Source: philsebastian.com (roaster’s own copy).

Doppelgänger is our darkest espresso roast and our easiest to use espresso. Just like Alter Ego, don't expect sweaty looking black beans. Instead, these beans have been roasted to a beautiful chocolate brown colour. Our goal was achieve a rich, smooth and bold espresso that can work in milk or on its own, in a fancy manual espresso machine or a super-automatic. Source: philsebastian.com (roaster’s own copy).

Typica is one of the oldest coffee varieties in the world, and one of the hardest to justify growing. It yields less, it's fragile, and most farms in Costa Rica moved on from it long ago. Ale and Tacho Solis went ahead and planted it in 2018, way up at 2000m on their farm El Coyote, then waited five years for the first harvest. What they got is an elegant, very tasty coffee with delicate florals and soft peach. We've bought from these brothers since the day they opened their mill, and it's lots like this that keep us coming back. Source: philsebastian.com (roaster’s own copy).

Fig Mood starts to introduce more fruit into the espresso. Its hallmark is its fig-like sweetness, but the coffee brings in juicy cherry liveliness and it's rounded out with candied pecan - bringing balance, sweetness and stone fruits. It's designed for those that want to delve further into the fruity espresso territory but still enjoying grounding notes of chocolate, candied pecans and cola. Finca Hartmann Maragogype Natural has always been a force to be reckoned with, but for the past couple of years, it’s hitting new levels. The reason is that historically, the Marago was planted in their lower farm at 1300m and now, they replanted their Maragogype at 1500m - the difference is mind bending! Read more below. This omniroast has been optimized for filter, but a well trained barista will definitely be able to pull tasty shots with it. Source: philsebastian.com (roaster’s own copy).

Honey Haze is a delicate, sweet and balanced espresso. Honey sweetness is what we're after with this one. There are also fruit cake notes as well as subtle orange sweetness. It's designed for those that want to begin exploring flavours of fruit in their coffee without tipping the scales to a "fruity" espresso. Source: philsebastian.com (roaster’s own copy).

Fincas del Putushio is the latest project from coffee visionary Pepe Jijón and his son Jose Ignacio Jijón, focused on producing some of Ecuador’s most expressive coffees. The farm sits at a mouth watering 2200m of elevation and this lot features Typica Mejorado, which can go head-to-head with some of the world’s best Geishas. Pepe’s approach is rooted in a respect for nature and terroir. Through careful fermentations, he consistently produces coffees that are complex, and truly reflective of the coffee’s terroir. This coffee is for all you berry lovers out there. It's juicy, sweet and complex. The roast tends to be on the lighter side, highlighting juicyness and making this one of the most lively coffees on our lineup. Source: philsebastian.com (roaster’s own copy).

We're pretty proud of our decaf. It's very tasty and holds its own against other coffees in our lineup. It's very round, but it shines because of its deep sweetness, reminiscent of dried fruits. We developed this roast so that the coffee works both for filter and espresso. The coffee in Lights Out Decaf right now comes from the region of Suaza in Colombia. You can read more below. Lilac Dream is one of our most delicate coffees. It has a tea-like texture, stone fruit sweetness, underlying florals and orange juiciness. These will mostly be washed coffees from East Africa, but expect a few surprises from other countries that offer this flavour profile. Source: philsebastian.com (roaster’s own copy).

This espresso is for those who want out of the ordinary, focusing less on the chocolate notes and more on vibrancy. It's juicy, sweet and complex. The roast tends to be on the lighter side, highlighting juiciness and making this one of the most lively espressos on our lineup. Source: philsebastian.com (roaster’s own copy).

Mystic Melon is fun and explores nontraditional coffee flavours! Think of ripe fruits, perfumed aromas and tropical sweetness, all wrapped up in a syrupy round body. Source: philsebastian.com (roaster’s own copy).

Plum Runner is designed to bring the ideal balance between fruit and traditional coffee notes. It offers more distinct fruit notes, but it's really well balanced with base notes of maple pecans and sweet and spice from cola. Source: philsebastian.com (roaster’s own copy).

This is our ultimate crowd pleaser. Smooth Operator is meant to hit all the right notes and remind you back to your Sunday morning coffee. It's a very chocolatey coffee that's nicely balanced with caramel sweetness and almond roundness. If you're new to our coffee and you're unfamiliar with juicy or bright coffees, Smooth Operator is the right place to start. Source: philsebastian.com (roaster’s own copy).

Sugar Heist is all about sweetness and balance. It’s designed for those who like their base notes (chocolate, almonds, etc…) but want to explore, in a very minor way, the taste of fruit in their coffee. Source: philsebastian.com (roaster’s own copy).

New to our Core Lineup, Sure Thing is comfort with a little something extra. A coffee designed to gently expand what an everyday coffee can be, and make a daily ritual feel new again. Source: philsebastian.com (roaster’s own copy).

This espresso is all about sweetness and we take that very seriously. The coffees that go into Sweet Habit are naturally very sweet, and the roast profile we use is totally focused on sweetness. The result is a super smooth espresso that delivers a ton of toffee sweetness in the cup. Source: philsebastian.com (roaster’s own copy).
