Café Nuances
Paris, France
Artisanal specialty coffee roaster founded in 2021 by brothers Charles and Raphaël Corrot. Café Nuances roasts a short line of named single-origin coffees — Slow Dance, Rose des Sables, Wabi, Coffee & Cigarettes and the anaerobic Meteorite — sold whole-bean or ground for eight brew methods. It runs four design-forward Paris cafés (1er, Marais, Saint-Germain and near the Champs-Élysées), the Francs-Bourgeois room designed by Crosby Studios with its signature orange wall, mirrored ceiling and stainless-steel bar.

An elegant Indonesian bean with a natural bitterness and woody, forest-floor aromas, giving spicy tobacco notes and an intense after-dinner espresso. Café Nuances also serves it as a full-bodied morning espresso with bread and salted butter, or alongside marble cake or banana bread. Source: cafenuances.com.
Tobacco, spices, grilled almond, woody

Café Nuances' most atypical coffee: a Honduran lot given an experimental anaerobic roast with double fermentation and a long drying period, producing a distinctive rum-like aroma and the complexity of rare coffees. Best as filter but also a fine espresso — a stand-alone treat or an after-dinner, liqueur-like dessert. Source: cafenuances.com.
Blackberry, mango, chocolate, rum

A natural-process Ethiopian coffee — bright, delicate and extremely fragrant, closest in character to black tea, with nearly jammy fruit. Café Nuances suggests a cold-brew infusion to draw out its full profile, or espresso for a singular cup; it pairs with a scone and jam, a madeleine, or a piece of Comté. Source: cafenuances.com.
Jasmine, lychee, pineapple, black tea, flower bouquet

A full, well-balanced and rich coffee with very low acidity, sourced in Myanmar. Café Nuances recommends it as a morning filter or a light espresso; it takes milk well for lattes and cappuccinos, and a scoop of vanilla ice cream turns it into an affogato. Source: cafenuances.com.
Chocolate, pecan nut, apricot

Café Nuances' most harmonious, easy-drinking coffee, its yellow-fruit notes making it a succulent filter or iced coffee. It goes with bright lemon tarts, fruit tarts and clafoutis. Source: cafenuances.com.
