Günter is a specialty roastery in Freiburg founded in 2018 by Aurore Ceretta and brothers Philip and Mats Weller, and named German Roast Master in 2024 and 2025. It roasts weekly in Freiburg and likes to compare coffee varieties to wine grapes — each brings its own natural aromas. Its store and cupping/training space in Freiburg’s old town (Merianstraße 8, opened late 2023) pours espresso and filter, sells beans and gear, and hosts barista workshops; the “Curated by Champions” line showcases coffees found on the championship circuit. Enjoy a good start to the day with coffee beans from Brazil. Our Bom Dia espresso bean accompanies your morning with sweet and nutty flavours. The beans for this single-origin coffee come from Fazenda São Domingos in the Mococa region of Brazil. We source the green coffee beans from Ocafi, a company run by Niklas from Freiburg and Luis from Brazil. We have been working with them for many years and Mats visited them in Brazil in 2022. Sweet, nutty

In our third edition of the "Curated by Champions" line, we present our Brazil Fazenda Guariroba coffee beans, which taste of lemongrass, white peach, and coriander seeds. The green coffee comes from Fazenda Guariroba in the Campo das Vertentes region of Minas Gerais state, operated by Gabriel Lamounier Vieira and Elisa Paiva Lamounier . Both producers have a long family tradition of coffee cultivation. Before the Fazenda was founded in 1939, patriarch João Ferreira Carneiro already cultivated coffee on the land in the 19th century. Our Burundi Kibingo coffee beans have a sweet, berry-like taste with notes of honey , redcurrant , and dried fig . The green coffee comes from over 3500 smallholder farmers who cultivate it at an average altitude of 1900 meters. The coffee beans are processed at the Kibingo Washing Station using the Washed method. For this, they are fermented for up to 24 hours, washed, and then dried for about 20 days. The green coffee comes from Finca El Yolombo in Anzá, Antioquia, run by Liliana Ramírez — who had never tasted her own coffee until Nikolai of Desarrolladores de Café met her and began supporting her farm. If you love coffee but prefer to drink caffeine-free, our DECAF is made for you. Notes of maple syrup, sesame and chestnuts make this coffee a real taste experience - despite the lack of caffeine! The green coffee is a variety blend of the Catimor and Sarchimor varieties and grows at an average of 1250 meters above sea level in the Veracruz region of Mexico. We source it directly and without detours from the Rancho San Felipe farm . The De Gasperín family has been running this since 1924 and also works with other producers in the region. In our second edition of the "Curated by Champions" line, we present our coffee beans Ecuador Finca Soledad , which taste of elderflower , honey, and mulberry . The Arabica coffee of the Sidra varietal is grown at 1515 meters, processed as Honey , and then dried with an extremely elaborate and controlled process. Our signature blend Günter is a light roasted, fruity-sweet espresso blend with chocolatey-nutty notes and a particularly long-lasting, creamy mouthfeel. Friends of stronger filter coffees will also get their money's worth with this blend. We keep developing this roast every year. In the most recent version we have chosen green coffees from three countries . These include Brazil , Ethiopia , and Guatemala . At 50%, the Arabica variety Mundo Novo from Fazenda Matao in the Mococa region, Brazil, has the largest share. With its nutty aromas and creamy texture, it forms the basis for our Günter. Sweet and berry-like, with notes of red apple, brown sugar and raspberry. The green coffee comes from around 1,000 smallholders in the Ribang Gayo cooperative, chaired by Asman Arianto, who has grown coffee himself since 2001; the trees are cultivated at an average of 1,800 metres and processed on the cooperative’s own site. Our highest-caffeine coffee blend, Marcello Strong, consists of two sustainably sourced organic coffees and impresses with a full-bodied flavor, a frothy crema, and notes of dark chocolate and caramel. Marcello Strong is our interpretation of an Italian roast, meaning it's very dark roasted. The star of the show is a Robusta from India , which provides plenty of caffeine and a long-lasting, frothy crema. A naturally processed Arabica from Brazil adds the subtle nuances to the blend. Our organic coffee Marcello Sweet is an Arabica-Robusta blend . Nutty aromas and a pronounced sweetness play the main roles, with notes of apricot, hazelnut and malt. The typical characteristics of Robusta give this coffee a high caffeine content, rich crema, and robust texture. For this blend, we use three coffees from India, Brazil, and Peru . Fruity and sweet, with notes of cherry, baking chocolate and mango. The natural-processed green coffee comes from the Kindeng Dry Mill in Papua New Guinea’s Western Highlands, where around 1,500 smallholders farming one to two hectares each deliver their cherries. Our certified organic Peru Lima Organic coffee has sweet, fruity notes of chamomile, almond, and orange. The green coffee comes from the Lima Coffee association , in which around 800 small farmers from various coffee-growing regions in Peru are currently organized. In 2016 they were around 300 people. The stated goal is to bring the great Peruvian specialty coffees to the world. There is great interest in becoming a member of the association: In addition to the quality of the coffee beans, the standard of living of many farmers has also improved significantly over time. Our filter coffee Rwanda Shyira presents itself with berry and floral notes, reminiscent of white tea , red apple , and raspberry . The green coffee comes from the Shyira Washing Station in Rwanda's Nyabihu District. The station is considered one of the highest in the region and is operated by the Muraho Trading Company , founded in 2016 by the brothers Karthick and Gaudam . In May 2024, Plotcoffee visited the station and was able to witness firsthand the meticulous care with which manager Hagumimana Evaristo and his team process the coffee. Our strong Toulouse coffee blend consists of three sustainable organic coffees and impresses with a full-bodied taste and notes of chocolate and brittle.
