Owner Katsuyuki Tanaka's house blend, built on green coffee from the major growing regions of South and Central America and Africa. Its complexity gives dark chocolate, sweet citrus and caramel with a long finish, and it works as espresso and as pour-over. It is the base of Tanaka's signature drinks, the "Angel Stain" (2009) and "Dirty" (2010). Sold to the trade by inquiry; there is no online shop.
