Cà Phê Ru is a mobile Vietnamese specialty-coffee cart founded in 2019 by friends Nghia and Tran ("Ru" means "lullaby" in Vietnamese). They source single-origin lots directly connected to Vietnamese farmers in Đà Lạt, Bảo Lộc and Quảng Trị, roast locally in Sacramento, and pour traditional phin-filter coffee at the Greenhaven Pocket Farmers’ Market (Sundays, seasonal) and other Northern California markets — there is no fixed storefront.

A natural carbonic-maceration Fine Robusta from Future Farm in Bảo Lộc, Lâm Đồng, one of Vietnam's producers working to lift Robusta's quality and value. Cà Phê Ru shared a booth with Future Farm's Mr. Toi at the 2022 Specialty Coffee Expo in Portland. Dark fruit and dark chocolate, with a bourbon-like, winey edge as cold brew. Source: capheru.com

Liberica from the 96B Liberica Project in Hướng Phùng commune, Quảng Trị: low (600 m) but steady at 24–26 °C and humid. The French brought Liberica here in the early 20th century as windbreaks, and its cherries long sold cheaply under other names; since 2022 the project has been experimenting with processing.
