Roasteries / The Colombian

The Colombian is an Edmonton coffee company founded by Santiago and Kristin, inspired by the family coffee farm, Finca Santa Rita, in Santiago’s birthplace of Colombia. It sources, roasts and serves its own coffee at six Edmonton-area cafés and one in Saskatoon, and books its mobile bar, The Coffee Mule, for private events.

To speak of Alirio Aguilera and Finca San Isidro is to speak of a life dedicated entirely to coffee. Alirio has transformed his 11-hectare farm in the Guachicos River Basin, in Palestina, Huila, into a benchmark of quality in the region. The work supports his wife and three children, who are active participants in the farm's production, and has helped elevate Colombia's reputation in the specialty coffee world. The farm sits at 1,600 metres, within a microclimate shaped by the Guachicos River Basin that provides thermal regulation and specific humidity levels favouring sugar development, espec Source: thecolombian.ca (roaster’s own copy).

Dark Mule Espresso is the blend we serve across all our coffee shops, crafted for a smooth and satisfying espresso experience. It shines on the espresso bar, producing a flavourful shot that holds up beautifully in milk-based drinks while remaining sweet and approachable black. Sourced directly from our trusted Colombian producers, this blend highlights natural sweetness, body, and balance. Each harvest is unique, but we craft Dark Mule to deliver a consistent and familiar profile year-round. Source: thecolombian.ca (roaster’s own copy).

Yohana produces this coffee at Finca Bella Rosa, in Vereda La Cristalina, Pitalito, Huila, at 1,650 metres. She inherited the farm from her mother, Rosalba, and named it in her honor. Yohana has managed the farm for three years, growing 2,000 Pink Bourbon trees. Alongside farming, Yohana works as a coffee quality analyst at an independent lab in Pitalito, where she evaluates samples, roasts, and runs sensory analysis for producers across the region. She's spent over eight years in the coffee industry, including work with a cooperative and a differentiated coffee exporter in southern Huila. Source: thecolombian.ca (roaster’s own copy).

Siesta is our decaf coffee that proves great coffee doesn’t need caffeine to be satisfying. Sourced from independent smallholder farmers in Nariño, Colombia, this coffee showcases the sweetness and balance that Colombian coffees are known for. We serve Siesta on bar at all seven of our coffee shops, and the response is always the same: people are surprised it’s decaf. Carefully selected and washed-processed, this coffee retains the character and flavour complexity you’d expect from a great cup of coffee. Source: thecolombian.ca (roaster’s own copy).

Víctor Barrera is a lifelong coffee producer whose identity and livelihood are rooted in the soil. Finca El Tesoro is not a solitary effort. It is the economic engine and life project for his entire family, including his wife and daughters, who depend on the farm's success. The 6-hectare farm sits in El Sinaí, Palestina, Huila, at the gateway to the Colombian Massif and close to Cueva de los Guácharos National Park. This setting gives the farm a unique microclimate, and the area's environmental richness and pure water resources translate directly into the quality of the coffee. Designed to be versatile, it produces a rich, chocolatey, and smooth coffee whether brewed as drip, French press, pour-over, or espresso. Source: thecolombian.ca (roaster’s own copy).
