The 1852 represents our desire to perfect coffee beans destined for lattes. This blend consists of a Brazilian coffee (Nova Resende, Minas Gerais) and a Colombian women-owned farmer's coop (Las Rosas, Huila). With its more intense roasting, this blend reveals flavours of dark chocolate and molasses. The 1852 is perfect for a latte in the morning or an espresso bursting with rich character. This is one of those rare decaf coffees that's actually turned out to be a success. On a blind tasting, we couldn't tell that it was decaffeinated! Coming from the Cauca region of Colombia, it is treated following the sugar cane process at the Descafecol plant. There, they use local sugar cane and source water to treat the coffee. The roast profile is quite developped. In espresso, its body is silky and with notes of chocolate. This being said, we really enjoy it as filter, too, where it boasts flavors of dulce de leche and milk chocolate. Source: structurecoffeeroasters.com (roaster’s own copy).

The Fondation is our signature espresso blend: it's a medium roast highlighted by balance and sweetness as its primary targets. It's currently a blend consisting of a red bourbon lot from Luis José Valdez in Caldas, Colombia and a Brazillian lot from Nova Resende in Minas Gerais. Butterscotch and cocoa notes dominate this espresso. If dialed in right, you'll get an incredible balance between sweet acidity and cocoa bitters. With its classic and balanced profile, this reliable coffee is your go to for a flavorful cup of coffee. If we had a "house blend", the Fondation Filtre would be the one ! Those beans are the result of the strong labour of a cooperative of 432 women coffee farmers and their family members, participating in the original Las Flores project in La Plata, Huila, Colombia. Honduran coffee season is back and we are glad to offer Maria's coffee for the second year ! Originally from Tegucigalpa, María Dolores discovered coffee after moving to the Honduran mountains with her husband, Juan Adolfo Bautista. Inspired by a meeting of women producers organized by the COMSA cooperative, she founded Finca Mini Granja Dilma in 2016, a sustainable ecosystem where she also grows vegetables, raises animals and produces her own organic fertilizer. Today, she is an inspiring leader for women producers in the region and a pioneer of specialty coffee in Honduras, working with her Source: structurecoffeeroasters.com (roaster’s own copy).

For over six decades, Finca La Bolsa has been a cornerstone for specialty coffee in Guatemala. Founded in 1958 and run by the Vides family, it has built its reputation on its commitment to quality and innovation. Nestled in the mountains of Huehuetenango, between 1300 and 1600 meters above sea level, the farm benefits from cool temperatures, limestone-rich soils and a climate ideal for the slow ripening of the cherries. These conditions, combined with family expertise passed down through generations, result in coffees renowned for their depth and complexity. Source: structurecoffeeroasters.com (roaster’s own copy).

The Ntwari wet mill is located in Muyinga region, home to some 280 farmers, 50 of them women, who tend their coffee trees with care. With most smallholders growing just 25 to 30 trees each, the work calls for real precision and it's women who most often carry it out. One woman in particular set the tone for this community. Widowed several years ago, she carved out a place for herself in an industry long dominated by men, forged a connection with JNP Coffee, and grew a business of her own. Now she mentors young women coming up behind her, passing on what she once learned herself. Source: structurecoffeeroasters.com (roaster’s own copy).
