About this coffee
Cherries harvested at a minimum of 90% ripeness and floated to remove defects before pulping, then controlled oxidation and fermentation with specific yeasts, a thermal-shock wash at 45°C and a final cold wash at 5°C to seal the fermentation. Grown by Jorge Mira on the 150-hectare family-run Finca El Jaragual. Source: formative.coffee
