Hibi Kaffe is a small Oslo roastery launched in November 2024 by Japanese-born roaster Aya (Ayae Maki Fredheim), who started as a barista in Oslo in 2014 and was a café roastery’s head roaster from 2019 to 2023. “Hibi” means “daily” in Japanese — better coffee for everyday moments. It roasts light, ethically sourced single origins for filter and espresso, and shares its Jens Bjelkes gate space with The Little Pickle, whose bakery serves Hibi coffee by day. 2026 Falstaff Best New Opening Norway; second place, 2026 Norwegian Coffee Roasting Championship. This is a washed Geisha from the Los Naranjos smallholder project in San Agustín, Colombia. Light and juicy, with vibrant citrus and a delicate floral finish. It's the perfect way to start the morning. Los Naranjos is a coffee project from the rural area of Llanada Naranjos in San Agustín, Huila — a region as well known for its pre-Columbian archaeology, declared a UNESCO World Heritage Site in 1995, as for its coffee. This is a natural processed lot from Los Chelazos in El Salvador's Chalatenango highlands. You can find a papaya-like tropical fruit character balanced by a syrupy caramel sweetness. It works well both as an espresso and a classic filter. The name Los Chelazos comes from a local nickname for people from Chalatenango, a northern district of El Salvador bordering Honduras. The lot is a blend of coffees grown across the Citalá and La Palma cantons, both part of the Montecristo Trifinio — a tri-border biosphere reserve shared by El Salvador, Guatemala, and Honduras.  Source: hibikaffe.no (roaster’s own copy).

This one is for someone looking for more classic flavours in the cup. You will find milk chocolate sweetness, a rounded mouthfeel, and fruity notes like yellow plum. It's a good choice for breakfast. “Los Luchadores”, which is Spanish for “the fighters”, is a tribute to the hard work and effort the team puts together to achieve such a stunning coffee. These Pacamara cherries come from two of the farms the Salaverria family owns, Villa Guadalupe & San Francisco. These cherries grow at altitudes of 1400-1650 masl, on sandy loam soils. This is a natural heirloom lot from the Danche washing station in Ethiopia. You can enjoy the well-balanced acidity and sweetness, with hints of raspberry, stone fruit, and cocoa butter. It works great as a vibrant filter or bright espresso. Delicate and layered, with apricot and bright grapefruit freshness, and a floral tea character in the finish. A washed heirloom lot from Banko Gotiti in Ethiopia's Gedeb woreda. It's great for filter, and the sweetness comes out more when the cup cools down a bit. This coffee is processed at the Banko Gotiti washing station, from cherries harvested by surrounding smallholders. It's sourced through one of our suppliers, Monochrome General Trading LLC. This cup has a sweetness like honey and gentle white floral notes. It's a washed Geisha from La Joya, in Guatemala's Chimaltenango region, into the spotlight. It's delicate and complex, and works great as a filter coffee. This lot was grown by Elida Reyes Orrego in San Martín Jilotepeque, Chimaltenango, where coffee is farmed alongside staple crops like corn and beans on small plots, often under the shade of native oak trees. The region's cool, temperate climate gives its coffees a naturally vibrant, fruity character. Layered and sweet, with plum, balanced acidity with blackcurrant, and rosemary herbal notes toward the end. A washed lot from the Thangathi Coffee Factory in Kenya's Nyeri County. It is perfect to brew for filter. This coffee is processed at the Thangathi Coffee Factory, about 152 km northeast of Nairobi in Nyeri County. The factory operates under the New Gikaru Farmers' Cooperative Society and is Fairtrade certified, sourcing cherries from smallholders who each farm an average of 0.8 acres and around 200 coffee trees, mainly of the Ruiru 11, SL-28, SL-34, and Batian varieties.
