Cafés in Santa Cruz, Los Angeles (incl. the Roastery Del Sur flagship in the Arts District), San Francisco and Palo Alto, plus seven in Japan with a roastery in Kita-Kamakura. Chispa combines two distinct Mexican coffees: washed La Perla from producers in Veracruz and Puebla, and anaerobic natural Río Verde from Guerrero. Grown at 1,650 meters in Santa Barbara, Honduras, this Pacas lot is processed using a washed method. After depulping, the coffee undergoes a 24-hour dry fermentation in concrete tanks before being washed and dried on raised beds inside a greenhouse.
