Fortitude Coffee Roasters was established in Edinburgh in 2014 (incorporated as Fortitude Coffee Ltd in 2016), built on the idea that "fortitude is found in the everyday" — that a genuinely great cup of coffee is a small, daily source of resilience, patience and kindness. Over a decade the company has grown from a single espresso bar into a roastery plus two Edinburgh café locations, Hamilton Place in Stockbridge and Abbey Mount in Abbeyhill, roasting sweet, balanced coffee sourced through long-term producer relationships — including a seventh consecutive year buying from the Shyira Washing Station in Rwanda. Sourced through Raw Material's Villamaria Project from Corozal — literally "Cold Lands", the highest-elevation area of Villamaria. Processed at the Jamaica drying station (1,300m), which works with 30–50 families from higher-elevation farms using Nuna dehydrators to carefully manage temperature and humidity. Decaffeinated using ethyl acetate derived from fermented sugarcane — a compound also naturally occurring in bananas and beer. Beans are steamed to increase porosity, submerged in the solvent to remove 97% of caffeine, then steamed again to clear residual traces, leaving under 30ppm. Grown by Sergio Aranda Gomez, showcasing the newly introduced Ombligón variety (named for the cherry's distinctive shape). A two-stage mosto fermentation — using liquid from a previous fermentation as a natural starter culture — precedes sun drying, producing a bright, rich, creamy-textured cup with tropical fruit and floral sweetness. Grown by Luz Helena Salazar on Finca Maracay. Only the ripest cherries are hand-picked and sorted, then given a distinctive 30-hour underwater fermentation at Cofinet's La Pradera facility to build complexity and sweetness. Grown by Mario Hervas at Finca Meridiano, established in 2011 and now dedicating 95% of production to this Typica Mejorado varietal, a hybrid believed to descend from Bourbon and Ethiopian Heirloom stock.
