Big Riff is our slightly darker take on a medium roast. It’s sweet, creamy and perfectly balanced. Have it in the morning, as an aperitif, or for dessert - the possibilities are endless. Our vision behind Big Riff is to offer a roast with a little more development that highlights the coffees dried fruit and plum notes. It is the perfect option for espresso but also a well-rounded drip offering. Imperio Rojo 18 comes from producer José Elandio Alvarado and his Imperio Rojo micromill in La Piedra de Rivas, within Costa Rica's Chirripó coffee-growing region. Here, José's farms climb from roughly 1,700 to just over 2,000 meters above sea level, where elevation and cooler mountain conditions contribute to the slow development of coffee cherry. José's path into specialty coffee is one built through persistence. After spending ten years working in the United States, he returned to Costa Rica with the goal of establishing his own coffee farm. This year, we utilize a blend of Caturra and Bourbon varieties from the Vides family, who for the past six years have brought to our menu beautiful coffee lots from their farm, Finca La Bolsa, nestled between mountainous canyons in Guatemala. So to help welcome the cool nights and kaleidoscopic foliage, we’d like to offer Crimson, as one of our favorite seasonal offerings. Deep in richness and flavor, our intent is to match the magic in the air, with a clean and concise medium profile, daily drinker that balances crisp apple highlights with a warming, butterscotch finish. Worka Chelbesa comes from the Gedeb district of Ethiopia's Gedeo Zone, an area that has earned a reputation for producing some of the country's most distinctive coffees. The landscape around Chelbesa is characterized by dense, semi-forested vegetation, where coffee grows beneath a layered canopy alongside enset and other crops at elevations reaching 2,200 meters above sea level. This lot brings together coffee grown by hundreds of smallholder farmers surrounding the village of Worka Chelbesa and processed by SNAP Specialty Coffee. In 1958, Jorge Vides, the grandfather of the family, founded Finca La Bolsa. He purchased a piece of land covered in untouched forest and began cultivating Bourbon and Caturra coffee varieties. With vision, purpose, and passion, he embarked on a journey that would transform not only this land but the future of Guatemalan coffee. In the highlands of Guatemala, where coffee trees flourish under the shade of native forests, our farmers have crafted a coffee that reflects the sweetness of nature itself. Hamacas comes from Bromelias, a family-run farm in La Libertad, Huehuetenango, Guatemala, where coffee grows between 1,950 and 2,000 meters above sea level. The farm is managed by Renardo Ovalle, part of the third generation of the Vides family to grow coffee in Huehuetenango. Today, that generation carries forward a long-standing commitment to producing exceptional coffee while working in balance with the people, land, and communities surrounding their farms. Princesa Gesha comes from Finca La Bolsa in La Libertad, Huehuetenango, a farm founded in 1958 by Dr. Jorge Vides and today is carried forward by the second and third generations of the Vides family. Sitting at 1,650 meters above sea level, La Bolsa is shaded by chalum, pine, and other native trees and has developed a reputation for carefully managed coffees rooted in generations of experience. Third-generation producer Renardo Ovalle introduced Gesha to La Bolsa, adapting the variety to the conditions of the farm and eventually developing the lot the family calls Princesa Gesha—a fitting name Source: metriccoffee.com (roaster’s own copy).
