About this coffee
Sidra from the Bayter family's El Vergel in Fresno, Tolima, Dropshot's direct partner since 2022. Fermented 72 hours anaerobically with mosto from a fermented Java lot as a starter, dried in silos for two to four days and then about 18 days in the sun, and rested 30 days before milling. Wild strawberry jam, red apple, raisins and cherries.
