About this coffee
Ki-Saya combines two Mayan words — "tasty" and "nature" — for an organic Chiapas lot from smallholder farmers, most of them Tzotzil and Tzeltal, who ferment cherries 12-17 hours before washing and patio-drying next to their homes. Source: citybeanroasters.com.
