About this coffee
A small lot from the Salaverría family's El Martillo estate in Santa Ana, in the Apaneca-Ilamatepec range. This Pacas is washed, then soaked twice in clean water after the first fermentation. Light roasted for both espresso and filter: black tea, caramel and hazelnut. Part of the limited Ota/Jätä ("take it or leave it") series.
