Overripe cherries rest 72 hours anoxic in the husk before about 20 days in a greenhouse. Yoiner's grandparents helped found Palestina; this was the competition coffee for the first Sibarist × A.M.O.C. Cup in Rotterdam, won by Simone Bianchi.
