1802 Roasters is a community-based artisan micro-roaster in Cypress Park, Los Angeles, roasting small batches and dialing in each coffee through roast profiling and repeated cupping rather than a fixed recipe. Sourcing runs through direct-trade importers chosen for their relationships with the farmers and cooperatives behind each lot, with an emphasis on above-market pay and environmentally responsible practices. The Cypress Ave shop doubles as a bagel counter under the Saint-Raf Bagels name, serving 1802's own roasts alongside house-baked bagels and pastries.

Third-generation, certified-organic and direct-trade farm near Persizes in Minas Gerais; agronomist owner Ricardo de Aguiar Rezende has invested in reforestation alongside the coffee operation. From José Betancur Patiño's 15-acre farm in Caldono, Cauca: selectively hand-picked cherry, floated to remove damaged beans, then a 24-hour maceration before depulping and an 18-hour fermentation ahead of a 7-day raised-bed dry to 11% moisture.
