About this coffee
From José Betancur Patiño's 15-acre farm in Caldono, Cauca: selectively hand-picked cherry, floated to remove damaged beans, then a 24-hour maceration before depulping and an 18-hour fermentation ahead of a 7-day raised-bed dry to 11% moisture.
