World Coffee Roasting Champion 2017 (Rubens Gardelli), who began home-roasting in 2008 after years running his mother's bar and won the Italian Roasting Championship four years running (2014–2017) before taking the world title. A new production facility was purchased in 2017 and formally became Gardelli Specialty Coffees Srl in 2018. Sources exceptional single-origin lots — Geishas, natural and anaerobic ferments, carbonic maceration — from Peru, Colombia, Ethiopia, Kenya, Burundi and India, roasted on a customised solid-drum roaster, plus the Cignobianco signature espresso blend. Runs the Muzungu Project, working directly with producers at origin to ensure fair pay and sustainable farming. Motto: "Acidity is not a crime."
