Dawnbird is a specialty micro-roastery in Vaughan, Ontario, named for the bird whose song arrives with the first light. It roasts only coffees scoring 80 points and above, in small batches roasted to order, and spends its time on the small decisions — development time, airflow, resting — that let a coffee taste of where it came from. The range is split into the Foncé series of modern medium-to-dark blends for espresso, milk and all-day filter; the Spectrum single origins, each offered in Bright, Balanced and Developed roasts; and Xotic, small never-repeated lots such as an Arusha Gesha from Tanzania. Dawnbird sells online and ships across Canada. Source: dawnbird.coffee.
