About this coffee

From Finca El Babaco in La Coipa, Cajamarca, near the Tabaconas-Namballe reserve, run by third-generation producer Bernabé Padilla and his wife Neydi Tocto; the farm is named after the babaco fruit that grows among the coffee. A washed blend of Red Bourbon, Gesha and Catimor with a long, controlled fermentation: 24 hours anaerobic as whole cherry, 96 hours anaerobic after pulping, then about 18 days of sun drying. Juicy yellow plum, a botanical, herbal edge and a long caramel finish.
