About this coffee

From Manos Juntas, a micromill in the Sotará area of Cauca — one of Colombia's cooler coffee zones, farmed largely by Indigenous and Afro-descendant communities. Bought as fresh cherry on harvest day: Brix and pH measured, then a five-day nitrogen-assisted anaerobic fermentation in sealed tanks, cooled to 20 °C to stop, held five more days, then 30–45 days on solar dryers.
