The Naughty Dog

Founded in October 2018 in Jílové u Prahy by Petra Veselá — a multiple Czech Barista Championship winner who previously ran a café in Jílové — and Gwilym Davies, the 2009 World Barista Champion who ran a café in London. The pair roast on an Italian IMF roaster (hot air + drum technology) on Mondays and Wednesdays for clean, consistent coffee, sourcing green coffee primarily from Ethiopia, Colombia, and Panama. The roastery is named after their two dachshunds, Jenny and Mája. Open to the public for coffee at the roastery every Friday, 10:00-13:00. Source: thenaughtydog.cz

Classic full-bodied espresso: a natural "Castanhas" microlot from the Cocatrel cooperative in Carmo de Cachoeira, Sul de Minas (900–1,100 m). Sweet nougat, juicy black cherry and gentle bitter chocolate, minimal acidity and a long, creamy finish. September 2025 harvest. Source: kofio.cz

A special-edition decaf from Nestor Lasso's Finca El Diviso in Huila — rare Pink Bourbon at 1,750–1,850 m, autumn 2025 harvest, processed with anaerobic fermentation then washed (unusual for a decaf) and decaffeinated by the sugar-cane EA method. Playful and complex: raspberry-PEZ and gummy-bear sweetness, tropical fruit and a creamy milk-chocolate finish. Roasted for filter. Source: kofio.cz

A washed decaf from Huila — Castillo/Caturra/Colombia at 1,400–2,000 m (June–August 2025 main crop), decaffeinated with the natural sugar-cane EA method and given an omni roast. Fresh and surprisingly complex: bright lemon into toffee, then pistachio and marzipan with a clean bitter-chocolate finish. Works for espresso or filter. Source: kofio.cz

Not coffee but cascara — the dried skins of coffee cherries from Alberto & Diego Guardia's farm in Alajuela, Central Valley (1,250 m). Brewed like tea: hibiscus, honeycomb and black tea, naturally caffeinated. Steep ~15 g per 200–250 ml at ~95 °C for 5–10 minutes; also excellent iced. 2023 harvest. Source: kofio.cz

Sweet, balanced natural espresso from the Banko Gotiti station in the Gedeo zone — micro-climatically part of greater Yirgacheffe. Smallholder cherries from the surrounding villages, dried whole on raised beds. Blueberry and ripe peach folding into a smooth milk-chocolate finish over medium acidity. An omni-roast Ethiopian from the Banko Gotiti station in Gedeb, which employs 200+ people at harvest and pre-finances the smallholders around it. This lot went through a "Super Natural" process — roughly 24 hours of controlled fermentation before 3–4 weeks slow-drying on raised beds. Sweet, juicy, intensely fruity natural from the Hambela Buku Sayisa station in Guji — variety 74114 grown at 2,000–2,300 m. A long-running collaboration with Kofio: washed Ethiopian coffee from Beshasha in Agaro, Jimma, rested for several days in a barrel bought from a Czech whiskey producer that had previously aged Jack Daniel's in Tennessee. Caramel, chocolate and forest fruit with a whiskey finish that grows as the cup cools — no actual alcohol. Works as filter or espresso. Source: kofio.cz

A special-edition filter lot: fresh-crop Yirgacheffe from the Lalesa station, varieties 74110/74112 at 1,900–2,300 m, fermented with lemongrass leaves and dried whole — an experimental take on the natural process. Naturally processed espresso from María Elena Vides, who has farmed in Huehuetenango's Cuchumatanes highlands since 1996; the Vides family also runs a school for workers' children and partners with the Coffee Care education project.
