Founded in 2016 by Mikaël Portannier — 2025 World Coffee Roasting Champion and Meilleur Ouvrier de France 2023 — and Damien Buretier, a coffee exporter. The pair roast on high-end machines in a converted barn in rural Normandy, deliberately choosing the countryside over a Paris showroom to focus on the work.
