About this coffee
A Pink Bourbon lot from Sigilo, run through a double fermentation — 48 hours anoxic on the cherry, then 48 hours submerged in mucilage with inoculated yeast under controlled temperature/pH, finished with a thermal shock — for an expressive, citrus-driven cup. Part of the "black" series of process-forward lots.
