About this coffee
The Sanchez family cultivates coffee at 1,700m in the El Triunfo Biosphere Reserve, Chiapas, Mexico. Since 2022 they've collaborated with Beneficio Edelmira's micromill; this nanolot used a 72-hour anaerobic fermentation on 250kg of hand-picked cherries at peak ripeness (23° Brix), stored anaerobically at 21°C until pH reached 4.0, then dried 20 days on raised beds and rested 60 days before milling.
