Grown by Hervey & Rocío Cuellar in Oporapa, Huila. Hervey tested roughly 30 fermentation methods before settling on this profile: a 50-hour anaerobic cherry fermentation followed by a 60-hour bean fermentation and full wash, then slow shade-drying on raised beds for about three weeks. Colombia Silvia & Guillermo Rojas

Grown by Silvia and Guillermo Rojas on their Betania farm, which also produces mango, guanábana, pitaya, papaya and tapioca alongside coffee. This Pacamara lot — planted five years ago at the farm's highest point (1650masl) — is processed by oxidating cherries for 36 hours before depulping, then fermenting the depulped seeds in a closed bag for another 36 hours. From the same Lalesa farm (Ephtah, est. July 2023) as PRESSCO's Ethiopia Lalesa Natural, but processed anaerobically: cherries ferment nine days in plastic barrels before a 13-18 day dry. From the 3.5-hectare Lalesa farm in Gedeb, Yirgacheffe, acquired by Eptah Specialty in 2023. Heirloom trees grow under native ensete ("false banana") shade; the farm runs 350 drying beds with 20 permanent staff, rising to 250 seasonal workers at harvest (late November-January).
