About this coffee

A Tabi from the Vergara family's Finca Las Flores in Bruselas, Huila, at about 1,750 m. Picked slightly under-ripe to keep the ferment in check, it ferments 12 hours in the cherry, oxidises 24 hours in tanks, then is depulped and fermented a second time for 48 hours anaerobically with the mucilage on. Raspberry three ways (fresh, jammy and fizzy like sherbet) with dark chocolate on the finish; clear and tea-like as filter, much brighter as espresso.
