About this coffee

A special-lot anaerobically fermented, naturally processed coffee from Bombe in Ethiopia's Bensa district, Sidama Zone — one of the highest-altitude growing areas in Sidama at 1,900-2,400 masl. Light fermentation combined with the balance and sweetness of natural processing gives notes of papaya, bergamot, and dark chocolate. Grown by smallholder farmers cultivating a mix of Ethiopian heirloom varieties, as is typical in the region. Carefully sorted whole cherries are sealed in oxygen-limited fermentation tanks for controlled fermentation, then moved to raised beds to dry evenly under natural sunlight; the lot rests in storage before the dried cherry skin is removed and the coffee prepared for export.
