About this coffee
Grown on the Cardamomo plot on the slopes around F.C.J. Volcan Azul, overseen by fifth-generation farmer Don Alejo Castro, who keeps propagating new varieties each season. Pulped against a centrifuge, mechanically demucilaged, patio-dried for 6-10 days and milled at Alejo's own dry mill. Roasted for filter and espresso.
