About this coffee
A natural Bourbon Ají from La Cabaña in Bruselas, Huila, farmed for generations by the Ortiz family: William and his brother Julian run it with their parents, William experimenting with fermentation while father Libardo favours clean classic processing. Despite the name, Ají is genetically an Ethiopian-derived variety, named for a mucilage that can smell of chilli. Roasted for filter: nectarine, red currant, cinnamon and raisins.
