About this coffee

An experimental lot from Juan David Puerta's Finca La Sirena in Quindío (1,420 m). Cherries ferment 48 hours in closed tanks, are depulped and washed, then sealed for another 70 hours with a glucose syrup made by boiling pears, apples and lychees, plus rose petals, which draws water out of the beans (osmotic dehydration). Medium, soft body, very sweet, with malic acidity and delicate citrus: guava, vanilla cream and rose.
