About this coffee

From Juan David Puerta's Finca La Sirena near Armenia, Quindío, at 1,420 m. Cherries are floated and fermented in sacks for 12 hours, depulped and rested 24 hours, washed, then macerated for 48 hours in a blueberry syrup brought to about 63° Brix with glucose (osmotic dehydration) before drying to 10% moisture. Round and enveloping, very sweet, with berry acidity: blackberry, blueberry and violet candy. For espresso and filter.
